Gingercake

Found this recipe the other day, used to make this for my Granny all the time it was one of her favourites. Haven't made it for years wonder if it tastes as good as I remember.

Ingredients:

4 ozs soft brown sugar
4 ozs margerine
4 ozs black treacle
8 ozs plain flour
head teaspoon of baking powder
1/2 teaspoon of salt
at least 2 teaspoons ground ginger
1 teaspoon mixed spice
2 eggs beaten
1/2 pint milk

Method
1. melt marge, sugar and treacle in a pan an allow to cool.
2. Put flour salt and spice in a bowl
3. Add milk, eggs and melted mixture to flour
4. Beat well and pour into greased tin.
5. Bake till firm to the touch for 1 1/2 hours at oven mark 3 or around 150 degrees electric.

Hmmm might try making this at the weekend - maybe.

Think I remember making it with rum soaked raisins on my great Aunt's instructions I wonder if I am remembering right. Maybe I should try it and see just in the interests of science of course.:>

How gross am I?

You're not gross, but you tend to think everyone else is. And you're right... they are!
Some people may think you're a neat freak, but at least you'll never die of flesh eating bacteria.

This will come as no suprise to anyone who knows me.

Addictive personality

I have an addictive personality. I also have a confession to make. >:XX

I smoked yesterday again, quite a lot. I am kidding myself that I do not smoke because I do not take a whole cigarette, just a puff or two or three of Old Nick's ciggie, but yesterday was really bad because I kept on doing it. This is not the first time for me since the New Year. I am ashamed of myself, this has to stop I have broken a promise and I don't like breaking promises and I am setting a bad example to my daughter. I had given up for a long time but recently I have wanted needed to for a number of reasons I will not go into right now.>:-[

Anyway, this morning the cats woke me in the normal way by sticking their claws into my shoulders and chewing my elbows. Mr S gave them breakfast but then they came back to show me the moon and stars

The stars were still out and moon was setting

The colour of the sky changed as the dawn was breakingthe colours changedThe birds were singing, the cats were singing a song that they wanted out to catch birdies. I wanted and needed a ciggie, but I didn't have one, and I did not let them out either, instead we watched the changing colours of the sky as it went from dark red/orange dark orange and red

to a softer smokey colour kind of smokey

The craving for a ciggie passed, but I still feel restless, I know why but there is NOTHING at all I can do about it AND I am not having a damn cigarette because luckily I don't have any and the shops are closed!

Sunny again

Sunny again. B)

Is it going to be warm enough to eat outside today? I hope so, we have guests coming over for lunch and food always tastes better outside in the fresh air.

I notice the rooks are building their nests high this year, so doesn't that mean we are going to have a good Summer in folk lore?

Well best get the garden furniture out and cleaned up then.

Fudge (To mark the end of Lent)

Make some lovely home-made fudge to mark the end of Lent. Or if you are like me and don't observe Lent, then why the hell not just make it any way for whatever reason you chose?;D

Basic recipe

Ingredients

I small can of evaporated Milk
1 lb white sugar

2 ozs butter

Method:
Put the sugar and milk in a pan and boil the livign daylights out of it, stirring constantly for about 20 mins till the mixture changes colour from light cream to caramel and it starts to thicken and pull away from the sides of the pan. You will know when it is ready because a small amount of it dropped in some ice cold water forms a hard ball.

Then take it off the heat and beat in the 2 ozs of butter and pour into a tin and allow to cool.

How easy is that and how cheap. It is better and cheaper to make your own than buy it from one of those rip off home made fudge shops.

It is a perfect solution if you are in a position where you have to make something for a jumble sale, a charity bazaar or school fete as it is always a top seller and looks really impressive. You can make it in bulk but I would not recommend making more than 2lbs at a time as boiling sugar is dangerous it will take the skin off your hand if you splash it on yourself. Also you will need biceps like popeye to beat in the butter if you have too much in the pan.

Variations on a theme

All these things are added at the end with the butter.

1. You can add vanilla essence
2. You can add chocolate (good quality dark choc is best.
3. Cherries and or raisins
4. Cherries and or raisins which have been steeped in brandy or rum for a couple of hours but drain well as the excess alcohol will stop the fudge setting properly.
5. nuts
6.chocolate and nuts.

The possibilities are endless.
