Make some lovely home-made fudge to mark the end of Lent. Or if you are like me and don't observe Lent, then why the hell not just make it any way for whatever reason you chose?
Basic recipe
Ingredients
I small can of evaporated Milk
1 lb white sugar
2 ozs butter
Method:
Put the sugar and milk in a pan and boil the livign daylights out of it, stirring constantly for about 20 mins till the mixture changes colour from light cream to caramel and it starts to thicken and pull away from the sides of the pan. You will know when it is ready because a small amount of it dropped in some ice cold water forms a hard ball.
Then take it off the heat and beat in the 2 ozs of butter and pour into a tin and allow to cool.
How easy is that and how cheap. It is better and cheaper to make your own than buy it from one of those rip off home made fudge shops.
It is a perfect solution if you are in a position where you have to make something for a jumble sale, a charity bazaar or school fete as it is always a top seller and looks really impressive. You can make it in bulk but I would not recommend making more than 2lbs at a time as boiling sugar is dangerous it will take the skin off your hand if you splash it on yourself. Also you will need biceps like popeye to beat in the butter if you have too much in the pan.
Variations on a theme
All these things are added at the end with the butter.
1. You can add vanilla essence
2. You can add chocolate (good quality dark choc is best.
3. Cherries and or raisins
4. Cherries and or raisins which have been steeped in brandy or rum for a couple of hours but drain well as the excess alcohol will stop the fudge setting properly.
5. nuts
6.chocolate and nuts.
The possibilities are endless.

Yum Yum Yum ... Im off to the local shop to by some evaporated milk ... does carnation milk count ... is that evaporated ? I dont bake often, can you tell ?! And a small tin ... is the tin that is half the size of a normal tin ?!
