Spanish potatoes

Recipe as promised Nick.

This is a good quick but simple meal and this amount serves one person.

First slice a large potato into about 6 pieces and par-boil.

Then fry the pieces in a pan with a little olive oil, some chopped chorizo, chopped onion, chopped garlic until the slices turn first translucent.

Now push the potato and onions round the side of the pan in a circle and break an egg into the well in the middle (like you do for fried rice) and either scramble the egg and mix in the potato and chorizo or make it into a little ommelette and slice.

Oh I nearly forgot, chop up a handful of fresh coriander leaves and sprinkle over the top when ready to eat.
